Medical Medium Raw Mixed Berry Pie

“Raspberries are one of the top antioxidant fruits and are an essential food for optimum health. Raspberries are rich in vitamins C, A, E, K, and B-complex and minerals such as iron, copper, calcium, and magnesium. They are also high in ellagic acid which is a medicinal compound that helps to prevent cancer as well as benign and malignant growths.

Blackberries are packed with anthocyanin which have the ability to significantly reduce inflammation. The phytoestrogens in blackberries aid in the prevention of breast and cervical cancer and can relieve estrogen related symptoms such as PMS, bloating, food cravings, & hot flashes.

Strawberries are loaded with Vitamin C they help to boost the immune system by warding off colds, flu’s, and respiratory infections.

Walnuts are an excellent source of omega-3 fatty acids which have anti-inflammatory properties and are known to help prevent strokes, diabetes, coronary artery disease, and colon, prostate, and breast cancers. They are also high in B-complex vitamins and minerals such as iron, manganese, zinc, calcium, and selenium.” -Medical Medium

  • 2 cups walnuts
  • 1 cup unsweetened shredded coconut
  • 3 cups dates
  • 6 cups mixed berries (rapsberries, strawberries, blackberries, blueberries, elderberries, any kind)
  • 2 tbsp honey
  • 2 tbsp lemon juice
  • 1 cup whipped coconut cream (optional)
  • 1/4 tsp lemon zest
  1. Crust:  Place the walnuts, shredded coconut, and dates into the food processor and process until  combined. With your hands, press the crust mix into a 9-inch pie pan and place the crust in the freezer for 30 min to 1 hour.

  2. In a small bowl, whisk together the lemon juice and the honey until combined.

  3. Filling: Place all of the berries into a large bowl and toss gently to combine with the lemon juice and honey mixture. Pour the coated berries into the pie shell.

This pie was absolutely delicious! However, it was incredibly sweet. The next time I make this i’ll probably use use half the amount of honey.
